Wherever possible, we source our ingredients from controlled organic cultivation. Furthermore, we give preference to products from the region.We cook with rare vegetables from Herbeus Greens, a young market garden in Rannersdorf near Vienna, which produces fresh organic vegetables just outside the city.
Another long-term partner is Michael Bauer, a vegetable grower in the Weinviertel and supplier to the high-end restaurant trade. He is an expert in so-called ‘forcing’, the growing of plants in total darkness.
It is important to us that the producers of our products are fairly remunerated. That’s why our organic coffee comes from the Alt-Wien Kaffee roasting company. Together with the roaster, we have developed our (secret) Motto special blend.
We also emphasise organic wines: More than 50 percent of our premium wines come from biodynamic cultivation.
Together with the Ottakringer brewery, we have created PUR – the first draught beer to be exclusively made from domestic and controlled organic ingredients.
A portion of our tableware comes from the ceramic artist, Marianne Seiz,
while many of our cocktail glasses were handmade in Murano by Nason Moretti.
